True Daikon. Daikon is a spicy, slightly hot, highly nutritious sprout. Believed to stimulate the immune system, the tender leaves are high in vitamins A, B1, B2, C, E and K; minerals including calcium, iron, magnesium, phosphorous, potassium, zinc, carotene, chlorophyll, antioxidants and protein. Radish sprouts have been studied for their potent levels of anti-cancer glucosinolate compounds.
One tablespoon makes approximately 1 1/2 cups of sprouts. Sprouting time 4-7 days. Jar, saucer or sprouter can be used. When using jar cover mouth of jar with porous material secured with a rubber band. Soak overnight then rinse and drain, continuing this cycle 2 to 3 times per day until harvest. To minimise spoilage remove hulls by skimming off the top with a spoon. Sprout length 2-5cm. Sprouts can be stored in the refrigerator for up to a week.
