Seed is rich in vitamins, minerals and protein. High in Omega 3 oil (has the good fats), amino acids, also has plant estrogen and antioxidant qualities. Excellent as a micro-green but not for sprouting, also raw or in a myriad of cooking applications including in crackers and biscuits. Can be soaked overnight and eaten with breakfast cereal, and in this soaked form it can be used as an egg substitute in muffins and cakes. Also excellent feed for laying poultry.
